i've made this often and we love it. i know scape uses it a lot too.
i have tried making them ahead and freezing them, but found these meatballs do not freeze well. i think they're too soft. they don't hold their shape. i end up with meat sauce, which is still delicious, but not meatballs. (just an fyi)
matt just found out he has high cholesterol so we're pushing turkey even more. :)
ah, got it. definitely one of those things that is relatively easy to cut back on, but not so easy (or necessary) to give up completely. turkey is a totally good sub.
