spinach and artichoke dip anyone?

I was thinking of making spinach and artichoke dip as a started on Christmas but I've never made it.

Does anyone have a good recipe? I could do a search but I don't want to try something untested/recommended on a holiday.

alyssa, both mally and i have shared them in the past.

here's mine and hopefully she'll stop by with hers later. :)

i always get asked for the recipe when i serve this.  i found it online about 10 years ago and have tweaked it to how we like it!


Hot Spinach & Artichoke Dip

10oz package frozen spinach, thawed and well drained

16oz can artichoke hearts, chopped

8oz package of cream cheese, softened

½ cup mayonnaise

½ cup sour cream

½ cup heavy whipping cream

½ cup parmesan cheese

1 cup grated monterrey jack

1 T lemon juice

3 cloves garlic, minced

¼ t tobasco

¼ t salt

1.Cream together cream cheese, mayo, salt, sour cream, whipping cream and garlic.

2.Add parmesan and jack cheeses, lemon juice and tobasco.

3.Add spinach and artichokes and mix well.

4.Spread into a shallow baking dish and bake at 375 for 30-45 minutes, stirring half-way.

5.Serve with bread cubes and/or tortilla chips.

If you would like I can post a cold spinach artichoke dip recipe. Well its a spinach dip but I add artichokes to mine. If you do want it I can post it tonight when I get home.

this is exactly what I was looking for.

Here is mine:

Spicy Spinach and Artichoke Dip

1/2 cup butter
1 med onion
2 (10 oz) packages frozen chopped spinach (thawed and well drained)
1 (14 oz) can artichoke hearts, drained and chopped
1 (8 oz) package cream cheese
1 (8 oz) carton sour cream
1 cup shredded Monterey Jack cheese, divided
1 cup grated Parmesan cheese, divided
2 tbs Tabasco sauce (this is optional)
salt to taste
toasted pita bead wedges
1 med tomato, chopped

Melt butter in a large saucepan or skillet over med heat. Add onion and cook until soft, about 5 minutes. Stir in spinach, artichokes, cream cheese, sour cream, 3/4 cup of the Montery Jack cheese, 3/4 cup of the Parmesan cheese, Tabasco, and salt. Stir until well blended and heated.
Pour mixture into a 1 1/2 quart casserole dish and top with remaining 1/4 cup Monterey Jack and 1/4 cup Parmesan cheese. Bake in a 350 deg oven until cheese starts to brown, about 10 minutes. Serve with pita bread and garnish with tomatoes.

I make this every christmas. It's very good.
