what do you do with leftovers?

Just curious what everyone does with their leftovers. Until a couple of years ago, we ate them the same way as we did on Thanksgiving but I've tried to branch out.

I sub turkey for chicken in Supa's enchilada recipe--and this is extra awesome because I can freeze it and eat it later in the month. I also make Giada's Turkey Bolognese, which is great because it uses dark meat (we don't eat it normally) plus leftover carrots and celery.

And tonight I threw a few things together and made stuffed shells, filled with cheese, leftover turkey, and roasted peppers. It was super yum!

What does everyone else do?

My kids love potato pancakes...will make those with the lftove mashed potatoes.

Your stuffed shells sound yummy. We do turkey n' noodles, and turkey croquettes, usually.

We didn't come home with any left overs this year - so sad.

We always do this the day after Thanksgiving.  It uses up most of our leftovers and is really yummy (that's not the opinion of most of my children, but that's not surprising).  I always freeze most of the leftover turkey to use in caseroles and other things that use cut up chicken.

Usually a turkey pot pie or a turkey tetrazzini

we never have much left over of the mashed taters. those are always hit pretty hard.
