Just curious what everyone does with their leftovers. Until a couple of years ago, we ate them the same way as we did on Thanksgiving but I've tried to branch out.
I sub turkey for chicken in Supa's enchilada recipe--and this is extra awesome because I can freeze it and eat it later in the month. I also make Giada's Turkey Bolognese, which is great because it uses dark meat (we don't eat it normally) plus leftover carrots and celery.
We always do this the day after Thanksgiving. It uses up most of our leftovers and is really yummy (that's not the opinion of most of my children, but that's not surprising). I always freeze most of the leftover turkey to use in caseroles and other things that use cut up chicken.
