PDubs BBQ Meatballs

Meatballs
1 1/2 pounds ground beef
3/4 cup oats
1 cup milk
3 tablespoons very finely minced onion
1 1/2 teaspoon salt
plenty of ground black pepper

Sauce
1 cup ketchup
2 tablespoons sugar
3 tablespoons vinegar
2 tablespoons Worcestershire
4 to 6 tablespoons onion
Dash of Tabasco

Preheat oven to 350 degrees.

Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.

Remove from freezer and immediately dredge in unseasoned flour.

Brown meatballs in canola oil until just brown. Place into a baking dish.

Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with egg noodles, mashed potatoes, or crusty french bread.

Finally, pour in milk, stir, and let simmer for 30 minutes to 2 hours—however long you need.

I have not made these, but seem good and family friendly. Plus you can make extra and freeze.

Cheese-Lover's Pasta Roll-Ups

Makes:
8 servings, 2 roll-ups each

What You Need!

1 egg, beaten
1 container  (15 oz.) POLLY-O Original Ricotta Cheese
2 cups KRAFT 2% Milk Shredded Italian* Three Cheese Blend
4   green onions, chopped
1 Tbsp. Italian seasoning
1 jar  (26 oz.) spaghetti sauce, divided
16 lasagna noodles, cooked
1/4 cup  KRAFT Grated Parmesan Cheese

Make It!

HEAT oven to 375ºF.

MIX first 5 ingredients until well blended.

SPREAD 1/2 cup spaghetti sauce onto bottom of 13x9-inch baking dish. Spread each noodle with 3 Tbsp. cheese mixture; roll up. Place, seam-sides down, in dish. Top with remaining sauce and Parmesan; cover.

BAKE 40 to 50 min. or until heated through, uncovering the last 10 min.

When ready to serve, thaw overnight in refrigerator. Bake, covered, 1 hour 5 min. or until heated through, uncovering the last 10 min.
One Effort, Two Meals!
Assemble roll-ups as directed; place half in each of 2 (9-inch) square baking dishes. Bake one as directed and keep the other for later. Cover with heavy-duty foil. Freeze up to 1 month. Ground Beef Mix (For Meatloaf and Meatballs)

3 meatloaves
3 -4 dozen meatballs

24 ounces tomato sauce
3 cups dry breadcrumbs
7 eggs, lightly beaten
1 cup onion, finely chopped
1/2 cup green pepper, finely chopped
2 teaspoons salt (optional)
1/4 teaspoon dried thyme, crushed
1/4 teaspoon dried marjoram, crushed(I used Italian seasoning mix)
8 lbs ground beef

1.Combine first 8 ingredients.
2.Add ground beef and mix well.
3.Divide meat mixture in half.
4.For meatloaf: Shape half the meat mixture into 3 loaves and place in a large high sided baking dish.
5.Don't allow the loaves to touch while baking.
6.Bake at 350°F for 1 hour.
7.Cool, wrap in heavy duty foil, label and freeze.
8.To serve, thaw loaves and bake in 350°F oven for 30 minutes or until heated through.
9.For meatballs: Shape into meatballs, using cookie scoop if available.
10.Place on broiler pan so fat can drain while cooking.
11.Bake at 350°F for 30 minutes.
12.Divide into meal size portions.
13.Freeze in single layer on cookie sheets until individually frozen.
14.Then freeze meal size portions in bags.
15.Add any of your favourite seasonings, herbs etc., to your taste. (We like Italian seasoning and I usually add some cayenne pepper).

Sausage-Rice Casserole (by Paula Deen)

One 6 ounce box Uncle Ben's long grain and wild rice
1 lb ground sausage
2 small onions, chopped
One 4-ounce can mushroom pieces
One 10 3/4 can condensed cream of mushroom soup
4 tbsp butter

Preheat oven to 350 degrees.  Cook rice according to directions on box.  In a heavy skillet over medium heat, cook sausage until throughly done, about 4-5 minutes; drain.  Combine all ingredients except butter and pour into casserole dish.  Dot top with butter.  Bake until bubbly, about 25 minutes

Pork Chops in Red Sauce
 
4 center cut pork chops
1 onion sliced
salt and pepper to taste
1 cup beef boullion(1 cube)
1/2 cup hot water
1 can condensed tomato soup
 
Preheat oven to 375 degrees
 
Heat a large skillet over medium high heat lightly oiled.  Brown pork chops on both sides seasoned with salt and pepper.  Place browned pork chops in a casserole dish and cover with sliced onions.  Dissolve bouillon cube in hot water.  Mix dissolved bouillon in with tomato soup.  Pork over pork chops.  Cover with foil and bake in preheated oven for 1 hour

Italian Chicken

mix 8 oz cream cheese with dry italian dressing mix (good seasons), slather it on chicken tenderloins, wrap with bacon, season with garlic salt and pepper. cook for an hour or so until bacon is browned at 400
