Here's our week.

I'm never this organized but we have two nights of parent teacher at 6:15 so I need to be a bit more organized this week.

Tonight: Asian Steak Stew
Monday: Chicken Chili
Tuesday: Pasta e fagoli

Wednesday we'll be at my moms (and parent teacher) and then we leave early on Thursday morning for SF so yay for a short week.

Our other standbys are beef stroganoff (i posted above), chicken or steak tacos/burittos, chicken salsa pizza, whole roasted chicken, spaghetti, stirfry, pork tenderloin (with extra chuckle for you 30 rock fans)

ok i have to google all of this. i dont even know what beef stroganoff is, though i've heard of it.

Beef stroganoff is either steak or hamburger fried up with egg noodles and mushroom cream sauce. This one is good if you like cream of mushroom soup - there are lots with real cream sauce but this one goes together in about 30 minutes start to finish.

i like the leftovers (if there is some) better than the real thing


1 tablespoon vegetable oil
1 boneless beef sirloin steak (about 1 pound), cut into strips (I also use ground beef if i don't have steak)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1 can (10 1/2 ounces) Campbell's® Condensed Beef Broth
1 cup water
2 teaspoon Worcestershire sauce
3 cups uncooked corkscrew-shaped pasta
1/2 cup sour cream



Directions:



Heat the oil in a 12-inch skillet over medium-high heat. Add the beef and cook until well browned, stirring often. Pour off any fat.

Stir the soup, broth, water, Worcestershire and pasta in the skillet and heat to a boil. Reduce the heat to medium. Cook for 15 minutes or until the pasta is tender, stirring often. Stir in the sour cream and cook until the mixture is hot and bubbling.

It was really good. Yum.

Asian Steak Stew
By The Canadian Living Test Kitchen

Servings: 4 to 6

Ingredients:
1 tbsp (15 mL) vegetable oil
2 lb (1 kg) beef stri-fry strips
2 onions, chopped
2 carrots, cut in chunks
2 garlic cloves, minced
1 can (8 oz/227 mL) sliced water chestnuts, drained
1-1/2 cups (375 mL) beef stock
1/4 cup (50 mL) soy sauce
2 tsp (10 mL) grated gingerroot
1/4 cup (50 mL) each all-purpose flour and water
2 cups (500 mL) broccoli florets
Preparation:
In large nonstick skillet, heat vegetable oil over medium-high heat. Brown beef stir-fry, in batches.

Transfer to 18- to 24-cup (4.5 to 6 L) slow-cooker.

Add onions, carrots, garlic, water chestnuts, beef stock, soy sauce and gingerroot. Cover and cook on low for 8 to 10 hours or until meat and vegetables are tender.

Whisk flour with water; whisk into cooker. Stir in broccoli florets. Cook on high for 15 minutes.

Can I have your recipe for maple syrup sweet potatoes?  I've seen sweet potatoes all over the place lately and now I'm CRAVING them!!  smile

 

 




yup, just peel and cube the s.p's into one inch chunks.  drizzle with olive oil and maple syrup (i put more than a drizzle ;)

350 for 1hr 15 min, toss half way through.

you can put onion in there if you want too.

you can also put in split chicken breast to make it a full meal (it's really good with the syrup on top).
