In keeping with my "no eating processed foods" yew years resolution, I ditched the Bisquick and made pancakes from scratch.

I don't think I will ever make Bisquick/Aunt Jemima pancakes ever again!

These pancakes were so fluffy, and they tasted fantastic! And you probably have all the ingredients right now in your kitchen!

1.5 cups flour
3 tbs sugar
4 tsp baking powder
1/4 tsp salt

(put these first 4 dry ingredients in a large bowl.)

in 2 small bowls, separate two eggs

add 1 c milk and 1/4 c cooking oil to the egg yolks and stir. add to dry ingredients and stir until incorporated.

beat the egg whites until fluffy and stiffish peaks form - 1 minute.

fold beaten egg whites into the pancake batter gently until just incorporated.

cook/griddle as you usually do! the batter will be super thick - i used a 1/3 cup measure to scoop it out and pour into the griddle, spreading it out slightly with a fingertip. i mad ethem about 4inches wide, not too big. the batter is noticably thicker than boxed mixes - it makes really fluffy pancakes, mine were about 1.5cm thick.

don't be intimidated by beating and folding the whites - it is super quick. i had the whole batter made in about 3 minutes time.
