cheescake bites?!?!

hey everyone!

we have a potluck at our marina this weekend.  i'm bringing supa's salsa (by request!!!), but that is SO simple that i was thinking that maybe i'd bring a dessert too.

i have it on the brain to make cheesecake bites.  i have an AMAZING cheesecake recipe, but i'm not sure how to convert that to mini cheesecakes.

any thoughts on this?  could i just press some of the crumb crust onto the bottom of the mini muffin cups and then add the cheesecake batter on top?  i'm just not sure if it will work.

apies - that is what i would do.

i would just be sure that the crusts were not too thick to outweigh the filling.

is it a bake recipe?  if so, i would look online for other mini cheesecake recipe of a similar type to get an idea of what temp/how long they bake them.

i would google it now for you, but ihni what your recipe is like!

oh - can you post the recipe?  i have yet to find one that i love so would like to try yours :)

i found this recipe that got rave reviews, so i think i'm going to use my batter recipe, but use this one as a guideline.  i think using the mini foil liners is a good idea - i was worrying about sticking.

Yep, it'll work.

We made some a few months ago that were super adorable, and everyone loved them. Bakerella made some on a stick, too, that would be great, but since you have a filling that you love, I wouldn't mess with a good thing, and just do the cupcake version. Yum!

um, can you send me the link?  maybe i could do some bites and some on sticks with some sort of boating theme.  hmm.gif

ok, here's what i'm going to do...

i'm going to make about 40 mini cheesecake bites.

with the leftover batter (b/c i know i will have a TON), i will bake another cheesecake and make that into pops.

yippee!

(Sorry, I walked away from the computer for a bit)

Maybe if you have a baking supply store nearby, you could find some fish, boat, or anchor shaped sprinkles or something. Or you could just get edible markers and draw some stuff on them. (They aren't exactly all that cheap, but you would probably get your money out of them, especially since you make cookies at Christmas.)
