Do simple things.

Get a rotissarie chicken and add a veggie
make a crock pot meal with dumping in chicken breast and whatever else you want and let cook

make pasta ? Is that too hard to do? Not sure what you are able to do.

What about something like this, Liz:

http://www.timefordinner.com/menu.php

I just did it here again and I'm so very happy with doing this. It's real food and you can control what you put in (to make it kid friendly).

It also looks like they have a to-go option which might be best in your case since you probably can't stand up to do it.

I think these places always sound expensive and it's hard to spend 250 in one shot but each of the meals we do feeds 4-6 people (and you can normally split the meals over multiple bags). Plus, they do all the hard work and the cleanup and shopping. You don't have leftover cilantro rotting in your fridge, or a fridge full of condiments.

Anyway, just an idea!

Ditto the rotisserie chicken idea!

Pizza - you can find fresh dough in the fridge section. Canned sauce, cheese, toppings.

Grilled sandwiches - I like classic American. Also ham and Swiss or salami and Swiss. With soup on the side.

Fried chicken breasts- fresh white bread crumbs, I mix in some salt, pepper, garlic salt and Parmesan. Buy thin cut breasts or strips. Dunk in eggs then crumbs, pan fry with some olive oil. Serve with pasta and marinate sauce.

Omlettes. My kids like ham in theirs. You can get some frozen potatoes for the side.

My kids ( ok, me too!) like pigs in a blanket. Hot dogs With croissant dough wrapped around. I usually serve with a frozen green veg on side.

Lots of grocery stores have good fresh pre- made foods that I like better than frozen. Though they can be a bit pricier. Also, in the fridge section bob Evans has good foods like beef stew or turkey and stuffing. They sell the sides, like mashed potatoes, separate. And the portions are big.

((hugs)). Hang in there!

I love the crockpot too! I make some vegetarian things but also lots of meat. Some of the easy things I make in it:

Roast- throw in potatoes and carrots and you have a meal. Use a pack of onion soup mix with a little water and it gets even easier

Chicken, pork or round steak- throw it in with salsa or cream of mushroom soup. You can add some extras like black beans to the salsa or mushrooms to the soup.

Bean soup- Randall's makes a big jar of mixed beans so you don't have to soak them. Just put in broth and ham if you like and you are good to go.

Also, when it's just Elizabeth and I we make cheese quesadillas, but you can put lunch meat or whatever meat you want in them. If you have a rice cooker you can throw together some rice and beans with it.

Make stove top mac and cheese and add broccoli. You can add ham, turkey, chicken or tuna or serve a hot dog on the side.

Don't forget eggs for breakfast too! You can also spray a casserole dish with non stick spray mix up the eggs with milk and pour in the bowl. Then just add cheese, meat, and whatever veggies you like and bake.

i wouldnt do crockpot, because i couldnt imagine cleaning that thing with a broken leg.

i'd do chicken breasts (spray the pan with oil, put a little butter and garlic salt, 10 min on each side) and microwaved bake potatoes.

last night i did salmon with lemon juice and soy sauce (also in sprayed pan, 15 min) with sauteed spinach.  (i barely do starches bc i'm still waiting to get a stainless steel rice cooker).

broiled steaks? takes like 7 min and no effort.

definitely frozen stuff too.

i forgot my fave...

wrap bonemess chicken breasts with a few strips of bacon.

put in baking dish.  mix equal parts - 1 can of cream of mushroom soup, same amt sour cream.  spread on top of chicken.

bake for 3 hours at 325 degree oven.

makes a yummy sauce we love on rice.

You need crockpot liners!  No mess!

Liz, do not stress about food. You have enough to deal with. Crap, have cereal and fruit for dinner. Is someone grocery shopping for you?

we went last night.  such a funny story - don dropped me and ivy off and he went to get his hair cut.  so, i wasn't that familiar with the scooters and got one that evidently wasn't fully charged so I am half way through the produce section with ivy following behind  me crying because i wouldn't get her a $30 valentines bear.  the cart starts "put put" and i was lik, oh crap, what am i going to do if this dies - i left my crutches up front with the guard.  luckily i made it back to exchange it before it died completely and ivy settled for a $4.99 bear ;)
