I want to make sugar cookies for halloween. I have a recipe (thank you Muffy!) but Ethan wants them to be pumpkin flavored.

Does anyone have a pumpkin cookie recipe that works with cookie cutters? Otherwise I'm debating just adding some pumpkin puree to Muffy's recipe and hoping it doesn't screw them up too much. I'll probably have to reduce the butter to compensate.

I'm wondering if instead of adding the pumpkin you could add pumpkin spice (cinnamon, clove, ginger, nutmeg) to it. Maybe the flavor association would work just as well.

Thinking I might have to try that.

ooh, or pumpkin cookie cutters with decorations? the dollar bin at Target has halloween cookie sprinkels.

I really don't think pumpkin has a taste really, possibly since it's always masked by the spices - though I'm all in favor of adding the pumkin cause it would make me feel like I was having something healthy smile.gif

All the pumpkin cookies I saw seemed to be dollopy (is that a word?) instead of cut-out ones.

3/4 cup unsalted butter
1/2 cup packed brown sugar
1 tablespoon orange zest
1/2 cup solid pack pumpkin puree
1 egg yolk
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 pinch salt

Beat butter and brn sugar till creamy.

Beat in zest, pumpkin, egg yolk and vanilla.

Sift (or mix if you are lazy) the rest of the dry ingredients and mix into batter.

Chill 30 min.

Roll and cut cookies.

Bake 375 oven for 10-12 min.

They are quite plain. I would ice with a vanilla buttercream or cream cheese frosting.

Erin, I have the halloween cookie cutters and sprinkles. E was just insisting on the pumpkin taste.
