I make an easy one that everyone seems to love, but it is easy.

I get cans of Ro-tel and velveeta cheese. I dump in crock pot and voila!

I was going to post the exact same!  One can Rotel (no need to drain), one block velveeta.  YUM.

My mom always made it this way as well, sometimes she would even add Jimmy Dean sausage (the kind you buy in a roll....like ground beef looking...LOL) to it as well. It kinda spices it up too. : )

ok - I think I will go with this one.

I got one that uses sausage and I'm seriously not in the mood to cook sausage on top of everything else I have going on.

How many people will one block of velveeta + 1 can of rotel serve?  okay I just went to website and saw 24 servings.  People usually love this stuff so I'm thinking 2# velveeta . . .  we're having about 18 adults and 3 kids.

ha ha

this is fun planning a fiesta!   This is new for me  . . . I've had lots of themes, menu plans but never gone gigantic on tacos smile

oh, and this works out perfectly because tacos are one of the only foods my kids will gobble up every single time!!!
