Dora - help with party planning

I am having a party for kate on saturday - it's small, just family but still about 20 people - only 3 little kids including kate.

I thought about serving tacos, chips, salsa, other mexican foods.  But I need ideas.  What else can I add to it to make it good?

quesadillas would be fun.

are you doing a taco bar? i've always heard people rave about them.

i hate it, but i think people would expect guac and that's easy to make.

here is a con queso recipe from foodtv.com that got 5 stars. some of the reviews said they did it in a slow cooker so that might be a good option for a party! http://www.foodnetwork.com/recipes/saras-secrets/chile-con-queso-recipe/index.html

I had a dora party for Allie's 2nd.

We did a taco bar w/ beef and chicken and then all the fixings. People loved it. I used hard and soft taco shells and people could make their own.

I had guacamole, salsa, mexican layer bean dip, spanish rice and refried beans.

I kept it pretty simple. We did margaritas for adults.

there any many variations for guac, but this is a reg. one

  • 4 ripe, Fresh California Avocados, seeded and peeled
  • 2 Tbsp.lemon juice
  • 1 clove garlic, crushed
  • 1 tomato, finely chopped
  • ¼ cupfinely chopped onion
  • tsp. ground cumin
  • 3 drops hot pepper sauce
you can leave cumin out if want.

I have even bought really good homeade salsa and tossed it with avocados and mushed all together for a quick version if you wanted. usually the homeade chunky salsa has teh tomato, garlic, onion, etc already in. It is just as yummy.

Ditto on the taco bar... We did that for Hannah's 2nd Birthday, and it was a big hit. We did tortillas, crunchy shells, and chips, chipotle rice, beef, chicken, pork, salsa, cheese, black bean dip, and all that. Really that was pretty much it. People bashed on it, and we didn't need anything else.

Nothing beats homemade guac, but here at Kroger (and Walmart, I think) they sell premade, and while most of it is horrid, I think Wholly Guacomole is pretty great, and it saved us from having it go brown. We just opened up a packet (sneakily, so I could still get full credit, lol) as we needed it so it looked nice and fresh.

Well, in the same vein as the rotel/velveeta, in a pinch, I just get avocados and some premade salsa or and mix it up. Dont make it too spicy though or the little ones will all be cranky about it.

Kris are you near a Costco? They have an excellent layered bean dip its Rojo's brand and it is a hit at every party we have! Good stuff :)
