Tonight we're having grilled chicken, stuffing, and cheddar broccoli. We're between shopping trips, so trying to stretch out and use up what we have in the freezer.

On the menu plan (which, if I use no coupons, will still only be about $67, woot woot!) this week is:

French Dip Sandwiches w/ Corn on the cob
Dirty Rice and Sausage
Rosemary Chicken and Veggies w/ french roll
Pasta e Fagioli
Homemade pizza rolls w/ ceasar salad
Cheddar Jack Quiche w/ sauteed zucchini
BBQ chicken w/ baked beans and potato wedges

tonight they had steak and salad.
i'm having steak and sauteed zuccini with onions and parm.

tomorrow, sweet potatoes and baked chicken breast with garlic salt.

that's all i have so far :)

tonight - meatloaf, baked potatoes, salad

Monday - meatloaf sandwiches, tomato soup

Tuesday - tacos

Wednesday - Rotisserie chicken, buttered noodles, green beans

Thursday - baked fish, rice, salad

Tonight I made pork fried rice. I just make an easy one and add peas, carrots, pork, eggs and rice and doctor it up. I have to keep it light on seasoning and spice for the girls to eat. It was yummy though. I use brown rice and olive oil instead of other oils and white rice.

Mon - Spinach Lasagna roll ups - easy peasy w/ steamed green beans
Tue - Chicken Piccata and asparagus
Wed - Healthy Spinach Quiche w/ White House Salad
Thu - zucchini Fettucine
Fri - Free Night

We had oven roasted chicken, mashed potatoes, gravy, broccoli for dinner and gingerbread cake for dessert. Yum.

Things on this weeks menu (in no particular order):

quiche
steak and salad
chicken soup
crockpot chicken chili

you and i have similar cooking styles, i think (except that you seem to be much better). can you tell me how to make all of this?  this sounds like a dream menu to me.

tonight we ate on leftovers from the week.

tomorrow i am trying a new recipe slow cooker tex mex chicken.

i have plenty of food but not sure what for the other nights this week yet.

Kelly, it is all pretty easy. I can give you all the recipes. I just need to type them up. Some I have a web link from foodnetwork.  I do not have tons of time to cook, so most my meals are simple. We normally do meat and a veggie, but I am getting sick of just grilled meat. I will post them back here when I get them together. Another thing I now am in love with and just add things like tomato and chicken and other random veggies and dump it in the Quinoa. Have you ever had Quinoa? my friends are telling me lately that i'd like quinoa also. funny that you bring that up.  i cook the same way - very simple, a meat and a veggie.  my kids are really picky so i dont get very experimental.
no rush on the recipes. whenever you have a chance. thanks.
