chicken chili soup (slow cooker)

this is our favorite soup so i thought i would share:)

add to slow cooker:

4 boneless chicken breasts
2 28 oz. cans of diced tomatoes, undrained
1 box chicken broth
1 sm. can tomato sauce
1 jar salsa
4 stalks celery, sliced
4 peeled carrots, sliced
1/2 of a large onion, chopped
1 can kidney beans, drained
5 (or to taste) tsp. chili powder
cumin (to taste)

cook on low 7-8 hours/take out chicken/shred and return to pot. we serve this with shredded mexican cheese, sour cream, and cooked (i fry them) tortilla strips. yum!!

Sounds YUMMY! Thanks for sharing. I've been looking for new crockpot recipes especially since I've been taking care of my Grandma several days a week and with DH working both of us are too tired to cook dinner. I can't wait to try this!!!

Yummy!

I made this today and everyone loved it. Mia told me I make the best dinners,lol.

I even made the whole wheat tortilla strips and it added a nice touch.

This will be going in my fall/winter rotation.

 yay! i am impressed your kids will try spicy(ish) things and double yay because i made this one up myself:)  (but neglected to say that in my original post b/c i figured noone would try it if i did--lol!)

I just realized that I typed Mia. I meant Allison, duh. She loved it. She asked if she could bring it for lunch tomorrow.

I think it was very good. I may add corn next time and see how that goes. I think you could add just about anything.

Do you have a recipe for a white chicken chili?

I think that is awesome that you came up with it yourself! I am planning on making it on Tuesday, if I can make myself go to bed now so I can get to the store in the AM to pick up the stuff.

How are you ladies making the strips exactly? I have NEVER fried anything in my life!

very easy to do the strips.

I made mine with no seasoning or salt. I just took the whole wheat tortillas (4) and cut into quarters and then cut into thin strips. Then I put them in a bowl with some veg. oil. I was going to try olive oil, but not sure if that would work. I then coated them and put them on a baking tray. I baked for like 15 min or so. Basically until they are crisp.  Some people season them with cumin or other seasoning. I left them plain.

my strips aren't as healthy as melissa's! :)

i get the smallest size of white corn tortillas i can find--at my grocery store they come like 10 in a pack for .75. then i run the pizza cutter across to make strips and cook them in a layer of oil on the stove. fyi- keep the oil at around medium or a little higher--too high and the oil will ignite. ummm, ya maybe melissa's idea of baking them would be best for your first time. biggrin

lol, the visual of the oil igniting.

I am all about easy these days. Plus Allie loves to snack on them.
