Aunt Lisa's apricot nectar cake

Glen's Aunt Lisa makes this cake every year for Thanksgiving. I got her recipe for it the other day and entered it into a cake contest at my church. I came in second place. [I saw the recipe for the 1st place cake today, and it had rum in it. No wonder. ;D]

1 box yellow cake mix
3/4 cup oil
3/4 apricot nectar [comes in a can in juice aisle]
4 eggs
1 teaspoon lemon extract

Beat all of the above together until smooth. Pour into bundt pan. Bake at 300 degrees for one hour.

Glaze:
1 1/2 cups powdered sugar
1/4 cup apricot nectar

Mix together until smooth. Pour over cake while warm.

The second time I made this cake, I poked a bunch of holes in the cake (still upside down in the bundt pan on the cooling rack) and poured about a third of glaze there. Then I turned the cake right side up and poured the rest over the top.

Soooo yummy.

that sounds super delish!  and the apricot sounds more appealing than the usual lemon glazes...

i will have to try it!
