So this movie is Mason's current TV obsession.  He loves seeing the Eiffel Tower since watching it with my mom and learning that my mom and I once went all the way to the top.  LOL

It got me curious about the dish ratatouille.  It's basically a vegetable casserole, and can be made many different ways.

I used this recipe:

It requires a lot of slicing and dicing, but isn't complicated.  If I made it again, I would saute the onions first or chop them, as they came out a little crunchy for my taste.  I also drizzled some balsamic vinegar on the top.

Throw on the movie, have the kids help assemble the ratatouille, and then watch them actually eat their veggies!

You don't need to slice the veggies super-thin for this recipe - do you think *I* have a mandoline slicer? ;)

I love Ratatouille and the movie but I'm the only one here that eats it.  Eggplant is one of the few things that my DH hates.  Have you tried it cold?  The recipe I had said to serve it hot or cold but I haven't tried cold yet.
