Brown Sugar Meatloaf

This is SO moist and delicious... totally blows away the meatloaf that I remember as a kid out of the park!

  • 1/2 cup brown sugar, packed
  • 1/2 cup chili sauce
  • 1 1/2 lbs lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt (I actually use a garlic salt blend, but that's just my preference)
  • 1/4 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1/4 teaspoon ground ginger
  • 3/4 cup saltine crumbs, finely crushed (I usually use Ritz because they are what I normally have on hand, and they work great, too.)

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 5x9 inch loaf pan.
  3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  4. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
  5. Place on top of the ketchup.
  6. Bake in preheated oven for 1 hour or until juices are clear.

Is chili sauce ketchup? I wanted this recipe because it had brown sugar in the title. LOL

You can use ketchup if you'd rather. Chili sauce is just spicy(er) ketchup, so it's got a tiny kick to it, which really balances out well with the sugar.

Thanks. I have all the ingredients if I could use ketchup so I will do this tomorrow.

I use ketchup as well on my brown sugar meatloaf, turns out just fine as using chili sauce.  

Now I want to make this soon! thumbsup.gif

This sounds FABULOUS!

I very very very rarely buy ground beef...will this work as well with ground turkey or should I make any changes, ya think?

This will probably be made in the next week or so =)

I actually tend to use ground turkey 90% of the time and it turns out as good! thumbsup.gif  IMO I think it tastes better w/ ground turkey than ground beef anyways.

I've never tried it, but I imagine it would be fine!

The mixture is VERY wet before it's cooked, so it should stay really moist for you, which is really my only real problem with ground turkey (keeping it from drying out)

My best meatloaf trick is to line the pan with parchement paper first. Then you can pull the meatloaf right out, pour off the fat and slice it on a cutting board. And the pan isn't disgusting.

This meatloaf sounds delicious. We'll have to try it.

I usually make mini-meatloafs (make indivdual servings in a muffin pan). I bet this would work with that. It sounds so yummy. i guess I'll have to invite my parents over for dinner this weekend and make this.

 you are just full of great tips for me this week. will do that next time I make one.  however, i tend to put my carrots and potato around it and then bake. do you think I can still do that with the parchement below?

I made this tonight for supper (with 2 pounds of ground turkey) and it was SO GOOD!
