I'm lmao that you mentioned quiche. We used to have it ALL the time growing up, and I just added it to my springpad to have this week before I checked back in here.
Brown Sugar Meatloaf (and always with onion parm potatoes. always.) Chicken Rolls w/ mashed potatoes Spaghetti (I'm eventually going to make my own noodles and sauce, but for now it's just a meal of ease) Pepsi Pot Roast Garlic Chicken Pasta Casserole Breakfast for Dinner

Could you post the meatloaf and garlic chicken recipe or a link?
I usually do chicken 3 times a week, some sort of beef once and vege and/or bean for the other days. We always have steam in the bag veges for sides(unless casserole has enough veges) and sometimes mac and cheese or mashed potatoes.

I'm not sure we have much of a rotation. But there are some things I like to make and keep on hand.
Most of the things I cook for dinner are things the kids don't like, so I don't bother with them anymore. They either eat it or they don't-I am done trying to find things they like. Dinner isn't a big meal for them, lmao.
So the things we seem to always enjoy having:
-lasagna -beef pot pie -chicken enchiladas -dream dinners swiss chicken
Those are freezer meals, but not always the most healthy, not to mention they aren't very summery.
This time of year, we grill a lot. Shrimp, chicken, pork, sometimes steaks (when we do steaks we will cook hot dogs for the girls or something). If I marinate things, they will eat them grilled, unless they have grill marks.
Sides-we do potatoes a lot-either grilled or baked, noodles with saucy dinners, or rice. We eat a lot of broccoli and green beans, and this time of year we get corn on the cob from the farm all the time. They also grow a lot of squash, but tbh, IDK what to do with them.
We like to cook enough (well, not with shrimp so much because my kids are pigs when it comes to that and crab and such) that we can use the meat in another dish in the week-say stir fry or a casserole or something. Or I will use leftover grilled chicken on salads.
In the winter, we eat a lot more of the freezer type meals and a lot of crock pots roasts and such, or I will roast a chicken or something. we also eat a lot of soup, salad and bread in the winter (Bill is a serious bread-o-holic).
But I like to try new recipes and new marinades and such, so we don't have a ton of standbys.
Oh, and meatloaf-we love that in the winter time too-and that we have mashed potatoes with. YUM.
Bill ALWAYS wants spaghetti, and I have never liked it, so I don't make it often. But as I get older, I realize that spaghetti with a good meatball is delish, so I am going to try and work on a really good sauce recipe and play around with making meatballs. The girls love it too, so I should do that more often.
I just wish the girls would eat salad. Do any of your kids eat salad?
supa, jake just started eating salad. the boy will scarf it down as long as he likes the dressing - so far that is ranch and italian. but by salad, so far i only mean lettuce. even though he's eating bell pepper and cucumber once or twice, if i put it in the salad, he won't eat it, even with dressing on it.
emily won't touch it.
for squash, one thing that we love here is to slice squash and zucchini into half moons, and sautee with sliced onion and garlic. when it's done, i throw s&p & parm on it. we like it crispy, so i dont' overcook it. idk if em would eat it, but jake loves squash, so he might. i'll probably try to make that this week and see if he will eat it.
We grill a lot in the summertime too, and to be honest, we don't really have a rotation per say, because you never know what I'm going to come up with and cook, lol.
One thing we do have though at least once a week is fried pork chops. I love them!
I have no idea what we eat. I feel like we eat the same thing over and over too so I'm excited to get new suggestions.
We've been grilling a lot. last night I made grilled chicken, marinaded in garlic, lemon juice, olive oil, fresh basil, salt, pepper, and this quinoa greek salad with tomatoes, feta, kalamata olives, scallions, red onion, fresh thyme, and a lemon vinagarette. I love that salad and need to start making it more frequently now that I discovered they sell quinoa at Costco. We do baked beans and corn as side dishes a lot too.
We do a lot of mexican: tacos, quesadillas, fajita.
I also love orzo with fresh tomatoes, garlic, olive oil, basil and lots of parmesan cheese.
Later this week, I'm experimenting with a pasta dish. I'm going to grill zucchini, toss with some of the starchy pasta water and ricotta cheese to make a sauce.
I love summer for all the fresh produce but I'm missing some of my winter dishes. I'm craving soup but it was almost 90 this weekend.
we've gotten into a major rut so i'm going to be going back over this thread.
here are some of the things that we make:
some kind of meat, fresh veggies, some kind of starch
chicken burritos/tacos (rice, chicken, tomatoes, black beans, avacodo, cheese, sour cream) - the kids eat all the ingredients but not together
steak burritos
whole chicken (www.epicurious.com search simple roast chicken - beyond good and super simple - we sometimes do it with the thyme and sometimes we don't) with mashed potatoes and some veggie
homemade hamburgers with raw veggies
spaghetti and tomato sauce
pork chops with parmesan garlic rice
blackened chicken pizza (premade crust, salsa, chicken grilled with Spicy Mesquite spice from Club House) and cheese) - this is a 20 minute dinner
homemade chicken soup - i make broth from the whole chicken and then we add veggies and cut up leftover chicken
Tacos (ground beef and/or refried beans as the base)
Cheeseburgers on the grill
Tater Tot Casserole (one of the few meals that the kids ask for a second helping)
Breakfast dinner
Pasta casserole (tortellini or cheese ravioli with alfredo sauce, mixed frozen veggies and diced chicken)
Sloppy Joes (make my own sauce with ketchup/mustard/brown sugar)
BLT's and sweet corn (usually only in the summer with home grown tomatoes)
Cheesy potatoes with diced ham (crock pot recipe)
Taco Soup
This is hard to answer at this time of year because we grill most everything in the spring/summer. I'll be watching this thread because I need some fresh ideas!
